Spicy Shrimp Cauliflower Bowl

Recipe serves 2
1 lb.Raw Shrimp
Avocado
Chives
2 large eggs
1 tbsp coconut milk
1 tbsp Dijon mustard
2 tbsp Honey
Olive Oil
Sambal Oelek to taste (I used 2 Tbsp but I like spice)
My recommendation is make the sauce first and set to the side. Mix the sambal oelek, mustard, honey, and coconut milk in a bowl. Also peel and slice the avocado and set to the side.
In a pan heat olive oil for a couple of minutes so that it is hot but not burning. Add the cauliflower rice which should cook in about 7-8 minutes. You should stir occasionally.
In a separate pan add a little olive oil, let it heat, and add the shrimp. Cook for about 3 minutes and add the sauce mixture to toss and coat. This should only take about 2 minutes then turn off the heat.
Add your cooked cauliflower to 2 bowls and season with a little salt and pepper. In the same cauliflower pan add a little more olive oil and crack your eggs into the pan. The heat should be at a medium. Cook the eggs until the whites are set and the yolk is still a little runny.
Place the avocado in the bowl, the cooked shrimp, and add the fried egg. Garish with green onion and you have made a delicious low carb healthy meal. #cauliflowerrice #lowcarb #easyrecipes #lifeofanorthernbelle #healthyrecipes #keto
