Faux Potatoes-Daikon Radishes

It is hard to believe that these are radishes, but it's true and they are SO good! They take awhile to cook but they are easy if you have the time. I have been searching for good sides to stay low carb but it is really hard to find tasty options. This is now a go to for our family.

All you need is to pick up some daikon radishes and a yellow onion. In the picture below, we made three large radishes and 1/4 of an onion. They shrink down quite a bit so I would recommend using 3 large of 4 medium size radishes for every 2 people.
Heat up vegetable oil in a pan. Skin the radishes and chop them up into thin pieces. Chop the onion. Place the radishes and onion into the vegetable oil and let them cook for an hour.
